Hi helloo, I’m Kassie Mendieta BKA ibakemistakes. A professional pastry cook turned home-bakery owner turned free-lance recipe developer.

I spent time working in professional kitchens from 2015-2020 when I was laid off from Mr.Holmes Bakehouse amid the pandemic.

Now, well now we’re just going with the flow. I’m a full time recipe developer, cake maker and content creator, with a majority of my recipes being shared via my newsletter, bake chats, on Substack.

The time I spent working at Mr. Holmes was crucial. I learned a lot about flavor. It’s where I developed my flavor palette. And where I learned my philosophies on flavor: What grows together, goes together. F*ck around a find out. Most importantly, to live in a world of flavor you’ve got to break away from the world of “plain” vanilla. So I’m taking what I learned and am applying it to everything I bake.

My work taps into the nostalgia of my own childhood paired with the flavors I’ve come to love during my journey. There is a boundless eternity of inspiration out there though, from music, art, fashion, invigorating conversation, the feelings I express and even suppress. Everything about being alive inspires the food I bake.
